While the natural process was (and still is) the favored processing method for the dry regions of Ethiopia, in parts of the country where water is more available, such as Sidamo and Yirgacheffe, the washed process has become increasingly popular. Happily, it unlocks a very different set of characteristics from the heirloom varietals found here in the birthplace of coffee.
Washed process coffees from Ethiopia are brighter and more floral than the natural process coffees produced there. The cup is complex and elegant, offering lively citrus tones, complex tropical fruit and notes of Jasmine and honeysuckle in the finish.
